Homemade Sausage Making

Just wondering what the ice water bath after injecting is for. After the bath I can no longer tell the difference between the Toms and the Hens!!!! Thanx

I am not sure. I just checked Rytecs book ( where "CWs" instructions are pretty much taken verbatim from) and there is no explanation.
