Dead Deer Bacon

So I had 4 lbs. of dead deer and 6 lbs. of dead pig and 1 lbs. of back fat. It went like this.

Let them do a hand shake and get down to making bacon. To this I added my maple bacon mix and 850 ML. of maple syrup. Should be good a maple flavored.

Into three cake pans and into the fridge over night.

Next morning I flopped them onto the racks, came out real easy because I sprayed the pans with PAM. After they where in the racks I dusted them with some magic dust.

In the smoker now getting 4 hours of Hickory. Will up date later.

Frying some up, very little grease. Some people warned me not to add the pork fat as it's to much fat..........seems I should have added more.

And yes the taste test was WOW this is good dead deer.

Time to vac pack and weigh it out into 1 lbs. packages. I used the to-go lids shiny side up to support the bacon. Makes for easy packaging into the vac. bags.

Looks delish Devo. I wish I had some dead deer. We are currently overrun with live ones in our sub division. They are all over the place and are destroying everything. I am seriously thinking of getting a bow and bagging one at night. But I have neighbours all over the place and some of them think that these horned rats are cute. And I'm too old to go to jail.

You can get paint ball gun ammo filled with pepper spray.

Hey Devo,

At some stage, pre smoking I guess, you drained off the brine ?

Looks delicious, very innovative, never seen a bacon like product made of mince before this.

Some good ideas here :mrgreen:
