Thank You . It's been one week since I filled them and I used the wire tie method, which is the way they are recommending now. I packed them good. I did not weigh them until after the 72 hour fermentation process, but I do have accurate weights as soon as I put them in the refrigerator. The bags are holding up real well so far with about 5-7% weight loss. The bags are bonding. Should I still net them? Is there any way to post a picture on this forum instead of an http link?

Hi Lou,
Wire tie, zip tie, paper clips and string is all OK for the UMAi bags. It's best to still net over the UMAi bags. Saves you later on asking why there is so much loose bag material flapping in the wind.
Just roll the excess bag material tight before pulling the net over.

If you put all that sausage in the chamber at the same time, that is why the humidity was so high at the outset.
