Why do we use netting on salami?
Just for hanging it?
Does it help in any other way?
Just because it looks cool?

I'm going to speculate with the following:
Tradition- replete with old-world charm
Practicality- allows for hanging; good air circulation & surface exposure, maintains the shape, relatively inexpensive, keeps netting-weavers employed.
Coolness- refers back to 'tradition' but there's something very appetizing about seeing salamis netted versus wrapped in plastic or other means.
