Many people don't like Beef tongue. It is a very flavorful meat, prepared right it is very tender.
I have sometimes wondered if I grind the tongue meat and form it into a patty, then see how people would enjoy the awesome flavor (as long as you don't tell them what they just consumed!)

Here's a video that shows the process. Basically, using a mechanical tumbler similar to a clothes dryer without the heater the meat is 'massaged' with spices and extracts natural myosin.
